Usually you should first choose your course and then select the appropriate wine, but sometimes you can select the wine first and then order a suitable meal to be served with it. There used to be a legend that said that red wines were for meat, and whites for fish; this is not true. There are red wines suitable for fish.
The golden rule is to start the meal with a mild wine and end it with the strongest one. The lighter the meal is, the less body should the wine have. With strong meats, only the full bodied red wines should be ordered. And can you think of a better way to end a meal than with a sweet white wine? What about a combination of French Cheese and a fine Bordeaux wine?
