One of the local dishes served in Lagos, throughout Portugal and in Portuguese restaurants all over Europe is the Cataplana : a dish cooked over the fire in a closed two-piece folding pan opened only at the moment of serving, so that the juices and tastes of the ingredients mingle and do not escape.

The cataplana shown here contains potatoes, vegetables marinated in olive oil, diced pork, clams and other shellfish and a few pieces of smoked bacon to add a little extra taste. The wine to drink with this is Vinho Verde, « green wine », white despite its name (for which there are various explanations) and slightly sparkling.
