One of the things that surprised me about Geneva is the numerous restaurants that I saw while walking around the city, and their variety! French, Swiss, Italian, Spanish, Pakistani, Turk, German cuisine among many others are represented in this small city.
The local cuisine has an evident French influence. The more typical local specialties are pork fricassee, beef casserole and lake fish dishes.
In Geneva, you must taste the "cardoons", a vegetable with cream, and the "longeole", a sauce served with potatoes. And do not forget the cheese dishes: fondues and raclette should not be missed.
