In parts of Camargue, a white race of horses still lives in (semi-) freedom. But most of them have now been (semi-) domesticated for tourists to take rides on. Camargue is also a breeding-ground for fighting bulls. The best ones are sold (for a small fortune) to bullrings, while those of lesser quality are butchered to provide the meat for "gardian", the local beef stew with wine, herbs and spices.
