Everywhere in the island, one can see sheep grazing. Since the sheep cannot run away, they are let loose at certain times during the year, when they are no risk to the crops. At the end of the season, owners retrieve their sheep at a large fair. They can recognise their sheep by making cuts in their ears. Mutton is a staple food in Ouessant. the local dish is mutton stew cooked in peat (wood was too rare on the island to be burnt). The peat was lit during the day and would keep smoldering, and the stew would be cooked by dinner time.
