And here is the most famous Bouzigues product : oysters, fresh from the lake. They are eaten raw, with a drop of lemon or shallot-scented vinegar and a twist of the pepper-mill. But tastes differ in that respect. Mussels can be eaten raw in the same way or dipped in garlic sauce. The white wine to go with it is the famous Picpoul de Pinet.
