In other sites, the underground city hosts medieval workshops : presses for wine and olive oil, and cellars for the conservation of these products. Other, shallower wells were dug to dispose of non-degradable waste like broken pottery; and these, of course, constituted a welcome resource for archaeologists, who were thus allowed to date and reconstitute various vessels and other artifacts from early civilizations.
