13/46.- Bassin de Thau, Bouzigues, oyster beds

In Bouzigues and elsewhere in the Thau Basin, ostreiculture (oyster farming) works with oyster "tables" rather than the traditional oyster "beds" found elsewhere. From these tables, cables are lowered into the seawater on which the oysters can fix themselves and develop, and from which they can be conveniently harvested (This is a bit of a simplification. For the full story, visit the Bouzigues Museum). When necessary, the tables can be covered to protect the oysters underneath from too much glare and heat.
